Celeriac is also known as celery roots and very low in calories. 100 g root holds just 42 calories. It contains some health benefiting plant-nutrients, minerals, vitamins, and dietary fiber.
Celeriac is very a good source of vitamin K. 100 g root provides about 41 µg or 34% of recommended daily intake. Vitamin-K help increases bone mass by promoting osteotrophic activity in the bones.
The root is a very good source of essential minerals such as phosphorus, iron, calcium, copper, and manganese.
Ingredients for Chicken, celeriac stew;

Celeriac (Sedano rapa in italian)

1 red bell pepper
3.
1 yellow bell pepper
4.
1 courgette
5.
1 egg plant
6.
A glass of chicken broth
7.
Half glass of white wine
8.
Black pepper (optional)
9.
Onion
10.
Boneless chicken breast or full chicken

Olive oil

Salt
Preparations;
- Take the half yellow pepper and one red pepper remove seeds and chop in small cubes.
- Do same to courgette and egg plant
- Peel off skin of Celeriac (Sedano rappa) Wash and chop in smaller cubes too.
- Now heat oil in a pan and add all cubed vegetables, use medium flames add salt and stir till vegetables are cooked then turn off heat.
- Slice breast in 2 parts and put some of the cooked vegetables in the middle and either sew together or use tooth picks to pin the edges.
- For chich with skin and bones, just cut in pieces and cook along woth the vegetales.
- In another pan, with 2 tsp of olive oil in medium heat, gently put chicken ,sprinkle black pepper, salt and cook till both sides are brown, (turn gently).
- Add Chicken broth (you can put a cube of chicken seasoning or maggi in water and heat abit to get home made chicken broth).
- Add white wine cook in medium heat for 20-25mins, then add the remaining vegetables and cook for 5mins.
This meal is more of celeriac which contains some B-complex vitamins such as pyridoxine, pantothenic acid, niacin, riboflavin, thiamin. and many poly-acetylene anti-oxidants such as falcarinol, falcarindiol, panaxydiol, and methyl-falcarindiol.
