How To Prepare Eggplant Stew

Eggplant is a rich vegetable and can be cooked or baked in different ways. In this recipe, it's cooked along with bell peppers.

Here are the ingredients needed;

- 2 or 3 eggplants
- 1 red bell pepper
- 1 yellow bell pepper
- 1 leek
- 1 onion
- seasoning cube
- Thyme
- Salt
- Pepper
- Olive oil.
- Any meat or fish you desire to use




Preparations;

STEP 1
Cut eggplant, red and yellow bell peppers in big cubes,
- Put them in a pot and add a glass of water
- Cover to boil for 4 to 5 minutes
- Then drain off water in a clean bowl
- In the pot, use a wooden spatula to mash eggplant and bell peppers to melt.


STEP 2
- In a pan, heat oil, add sliced onions and leeks let heat for a minute
- Pour in your mashed eggplant and bell peppers
- Add, salt, pepper, thyme and seasoning cube
- You can add any cooked meat or fish of your choice
- Add abit of the vegetable water you stored aside previously,
- Cover to cook for 5mins.
Add vegetable water continously if too dried.


You can serve with rice, plantain, yam or potatoes.
