How to prepare Saffron Rice (risotto alla milanese)

The rice recipe originates from Lombardy in northen Italy  .  It is a mostly called risotto alla milanese.
This recipe is popular with its delightful and creamy yellow color.

It is easy to prepare and here are ingredients for 4 persons;

1)    400g of carnaroli rice


2)    Olive oil

3)    60g to 240g of butter

4)    1/2 white onion (chopped in pieces)

5)    A glass of dried white wine

6)    Parmigiano Reggiano or Grana Padano cheese (grated) 50g or more

7)  15 Saffron sticks or 2 powdered saffron bags ( For the skicks, soak in hot water for 2hrs before use).
Saffron stick and powdered.


8)    Salt

9)    A very good beef broth.


Preparations;

- In a non-stick pan, put a little oil , butter and onion and heat low,

- Add rice and stir together with a wooden spoon till toasted

- Add white wine to dizzle it

- Then add meat broth along with saffrons

- Cook for 15 minutes.


When  heat is off, add cold butter and parmigiano cheese and stir  to mix well.

Your risotto alla milanese is ready.

Use good meat broth. Some people add mushrooms and sea foods.
