Fusilli alla mediterranea

Fusilli is a type of pasta and fusilli alla mediterranea is an italian recipe which is especially prepare during summer. It is a mediterranean meal because it is a pasta cooked light with vegetable and olive oil.
Italy is well known for its exquisite meals and here is one menue i will like to share with you.

Here are the ingredients;


  • Spiral pasta(Fusilli)
  • Fresh tomatoes, chopped in cubes
  • 1 garlic
  • Olive oil
  • Few capers
  • Handful of chopped basil leaves
  • Handful of chooped Parsley leaves
  • 1 tsp  red / black peperflakes
  • 1 /2 Courgette sliced
  • Mozzarella cheese chopped in cubes
  • Half cup of lemon juice
  • Salt








Preparations;

-   In a bowl, put your chopped tomatoes, basil, parsley, mozzarella
-  Add a bit of lemon juice, salt and 2 tsp of olive oil mix and live to settle.
-  Pour Olive oil in a pan heat a bit, then add garlic, capers and Courgette.
-  Add a bit of salt and pepper flakes, with abit of already cooking pasta water and live in medium heat.
-  Cook for 2 mins and switch off heat.

-  Meanwhile, put a pot of water on the fire to boil add salt and put the fusilli let cook for 5-7 mins.
When it is cooked,
-   add 1 cooking spoon of pasta water to the pan of garlic, capers and courgette, filter the remaining pasta water away and add pasta to pan.
- Now add your tomatoes mixture from the bowl to the pasta add abit of olive oil, and the remaining of lemon juice and cook for 2 mins or till thick to your taste.
